Turkey Chilli with Twice Baked Potatoes : Food Is Fuel Friday

I totally love chilli. Chilli is one of those dishes that I think you either love or you hate.. and most people who love it have a favourite recipe.

Let me give it to you straight. If you have a favourite chilli recipe… you don’t need me. You can brown turkey meat instead of browning beef and do yourself and your digestion a favour. Not only is turkey leaner than most cuts of cattle used for ground beef, I also find that it’s more flavourful. I fully attribute my using ground turkey as being a large part of my weight loss journey as well. Changing my diet and my portion sizes has literally changed me in leaps and bounds.

May 033For this chilli, I browned a pound of ground turkey with one chopped onion and about 2 tbsp of chilli powder. You can add a bit of oil or water if you need to. In a food processor, I processed about 6 tomatoes and added them into the pot of turkey when it was fully cooked. You can drain the tomatoes before you put them in if you like a thicker chilli.

Then you can add just about any veggies you feel like adding. I like to use peppers, mushrooms, celery and carrots. Then add red or black beans and simmer.

I have always found that the longer chilli cooks, the better it tastes. If you’re the kind of person who likes a bit more spice, you can add jalapenos or any other type of pepper. I love to use chipotle chilli powder.  I didn’t add any salt to mine at all, but I like to leave salt to personal preference.

I served my chilli with these twice baked potatoes. To make these, I baked five medium sized potatoes. Then I scooped the insides out, leaving about a 1/4 inch rim of potato in each one. With the scooped out insides, mash together with a quarter cup of cream cheese, a quarter cup of sour cream, 1/2 cup of cheddar cheese and green onions if you like them. You can also add bacon bits or ricotta cheese while you’re mixing as well. Bake for about 20-30 minutes at 350.

They will disappear!  These things are delicious. Just be aware. Great for parties too!
