As far as I’m concerned, it’s never too early to get on the Halloween train. And with Thanksgiving this weekend, I know a lot of people out there are looking for cute, tasty treats to share at their family get-togethers. Halloween decorations and Halloween Baking are two of my favourite parts of October!
I’ve shared this recipe before. It’s no secret that come October, I’m making a batch every few weeks. They’re my favourite cookies ever, and that’s why I keep sharing them.
not to mention, when I was little I had the pleasure of making these with my mom, and now that I’m a mom, myself, I love creating these memories with my own daughter who will hopefully carry on the Pumpkin Cookie Tradition.
2 cups flour (I used half whole wheat)
1 cup rolled oats
1tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 cup butter
1 cup brown sugar
3/4 cup white sugar
1 egg (beaten)
1 tsp vanilla
1 cup pumpkin
1 cup chocolate chips
Preheat the oven 350 degrees (175)
Mix dry ingredients without the sugar.
In another bowl, cream butter and sugar. Add egg and vanilla.
Alternate dry mixture and pumpkin until blended. Add chocolate chips.
Form into circles, with stems. Make M&M faces, and voila!
